It's paradise, they told me. Thirteen weeks of sunshine and warm Caribbean waters!


 The most beautiful people in the world! And food that is plentiful, amazing and delicious!
I have been introduced to Soursop trees and fruit. A tea made of the Soursop leaves will aid in blood pressure control, and in a stronger version, will assist with the sleep.  The soursop fruit is like a cross between a strawberry and a pineapple! The fruit is indescribably delicious!.

Sugar apples are especially delicious, however the seeds make it more work to consume, kind of like the pomegranate. Sugar apple also progress from unripe and hard to over-ripe within a very short period of time.

We ate coconut freshly picked from the tree, FULL of coconut water and very rich, delicious coconut jelly on the inside of the nut! We ate the coconut jelly with a spoon, crafted by a swipe of the machete against the shell. Coconut is a master with the machete!  He is strong, skilled, kind and tender! Probably has someting to do with his position as a leader.

By the way, We ate the most amazing local cuisine, Saltfish! My co-worker, Daisy told me that they would make a regular Carib-woman out of me yet! Yes, I LOVE Saltfish and Johnny Cakes for breakfast! More about this next time!
